Cherry Tomato Pasta With Basil

Cherry tomato pasta is a simple and delicious pasta dish that features cherry tomatoes cooked with garlic, olive oil, and balsamic vinegar. The cherry tomatoes are cooked until they burst and release their juices creating the base for a sweet flavorful sauce.

Add cooked spaghetti, toss it in the sauce and it’s ready to eat. This quick and easy meal is perfect for a weeknight dinner or a casual gathering with friends and family.

Cherry Tomato Pasta Sauce with Spaghetti

Ingredients

  • 8 oz spaghetti
  • salt (for spaghetti water)
  • 4 cups cherry tomatoes (or grape tomatoes)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp balsamic vinegar
  • 1/4 tsp red pepper flakes
  • 2 tbsp parmesan cheese (plus more for garnish)
  • 1/8 tsp fresh ground black pepper (more or less to taste)
  • salt to taste
  • 1/2 cup loosely packed small basil leaves or roughly chopped large leaves (plus more for garnish)

Instructions

  • Place a large pot of water and bring to a boil.
  • Add salt to the water and cook the spaghetti according to the package directions. Don't overcook the pasta.
    *If the pasta gets done before the sauce, reserve a cup of pasta water drain the pasta. Add in a little oil and toss the noodles so they don't stick together. Add to the sauce once it's ready.
  • Heat a skillet or fry pan over medium-high heat. With 7 minutes remaining to cook the pasta, add the oil to the pan.
  • Add cherry tomatoes and cook for about 4 minutes. Shake the pan so the tomatoes heat up on all sides.
  • The tomatoes will begin to split open. Using a wooden spatula, press down on the tomatoes to help burst them open releasing the juice and stir the tomatoes.
  • Add garlic, red pepper flakes, and balsamic vinegar and continue to stir for 1 minute. Reduce the heat.
  • As soon as the pasta is ready, remove about a cup of pasta water and set it aside. Add the spaghetti to the sauce and toss in the sauce along with black pepper and salt to taste.
  • Pour in some of the reserved pasta water, if needed, to reach the desired consitency.
  • Add parmesan and basil leaves. Toss it to mix.
  • Add to a serving bowl. Garnish with additional parmesan and basil.
