Equipment

Ingredients

  • 3 cups diced or shredded chicken (approx. 1 1/2 lb of chicken breasts)
  • 1 tbsp vegetable or olive oil
  • 3 cloves garlic
  • 1 small onion
  • 1 32 oz container chicken broth
  • 1 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/2 tsp chili powder
  • pinch cayenne pepper (more to taste)
  • 1/8 tsp ground black pepper
  • salt to taste
  • 8 oz cream cheese, softened
  • 7 oz mild diced green chiles
  • 3 15 oz cans cannellini beans, divided
  • 1 cup corn (I prefer fresh corn, but frozen will work)
  • 2 tbsp cilantro (more for garnish)

Toppings (optional)

  • tortilla chips
  • sour cream
  • jalapenos
  • lime wedges
  • cilantro
  • shredded cheese
  • avocado

Instructions

  • Mince garlic, dice an onion, finely chop the cilantro, and cut the cream cheese into small cubes.
  • Drain and rinse the cannellini beans. Puree 1 1/2 cups of beans and 1/2 cup of chicken broth using a food processor or blender.
  • Heat olive oil in a pot over medium-high heat.
  • Saute onions for 3 minutes. Then add garlic and saute for an additional minute.
  • Add the chicken broth, cumin, oregano, chili powder, black pepper, salt, and cayenne pepper. Bring to a boil and reduce the heat to simmer for 5 minutes.
  • Add in the cream cheese and stir until it fully melts.
  • Add the corn, green chiles, white beans, bean puree, and chicken. Bring to a simmer and allow it to simmer for 5 minutes.
  • Add the cilantro and serve.
