Ingredients
- 3 cups diced or shredded chicken (approx. 1 1/2 lb of chicken breasts)
- 1 tbsp vegetable or olive oil
- 3 cloves garlic
- 1 small onion
- 1 32 oz container chicken broth
- 1 1/2 tsp cumin
- 1/2 tsp oregano
- 1/2 tsp chili powder
- pinch cayenne pepper (more to taste)
- 1/8 tsp ground black pepper
- salt to taste
- 8 oz cream cheese, softened
- 7 oz mild diced green chiles
- 3 15 oz cans cannellini beans, divided
- 1 cup corn (I prefer fresh corn, but frozen will work)
- 2 tbsp cilantro (more for garnish)

- tortilla chips
- sour cream
- jalapenos
- lime wedges
- cilantro
- shredded cheese
- avocado
Instructions
- Mince garlic, dice an onion, finely chop the cilantro, and cut the cream cheese into small cubes.
- Drain and rinse the cannellini beans. Puree 1 1/2 cups of beans and 1/2 cup of chicken broth using a food processor or blender.
- Heat olive oil in a pot over medium-high heat.
- Saute onions for 3 minutes. Then add garlic and saute for an additional minute.
- Add the chicken broth, cumin, oregano, chili powder, black pepper, salt, and cayenne pepper. Bring to a boil and reduce the heat to simmer for 5 minutes.
- Add in the cream cheese and stir until it fully melts.
- Add the corn, green chiles, white beans, bean puree, and chicken. Bring to a simmer and allow it to simmer for 5 minutes.
- Add the cilantro and serve.
